Menu Plan Monday

Last weeks plan went well. The honey soy noodles with tofu were yummy. I was exhausted on Thursday night so we tvp taco wraps instead of the planned taco salad (even that was too hard). On Saturday night we had afternoon tea leftovers and last night Kevin & I made up a reciepe. We had bought a box of mangos on the way up to my Aunts so we diced up one with the tofu, added some hoisin sauce and cream and served on some brown rice. Very yummy.

MONDAY: Spinach (From garden) & Ricotta Quiche (new recipe)

TUESDAY: Rice Paper Rolls

WEDNESDAY: From freezer (on my own for dinner and girls & Kevin -taking photos- at dance rehearsal)

THURSDAY: Lentil Bolognase

FRIDAY: Vegetable Curry

SATURDAY: BBQ

SUNDAY: OUT (Girls dance concert day)

No, I didn’t miss last Monday I just never got around to posting it. In fact, I planned out the whole month ahead. Anyway, here’s the plan for this week. I’m also getting back to focusing on eating healthier foods as we’ve been a bit slack the last few weeks and my body is feeling the result of too much junk food.

MONDAY: Pasta with cheese sauce (okay not a real healthy choice but both girls have full-dress rehearsals for dancing this afternoon so it needs to be quick)

TUESDAY: Zucchini Slice (that’s better….)

Muffin Tin Monday for one

I actually forgot to photograph todays muffin tin but this is the one from last week. It was just for Amy as Christy was unwell. She had cheese, dip, carrot, crackers, a homemade cheese scroll and a piece of peppermint chocolate.

Last weeks menu plan went well. There was a hitch one night when I didn’t have any TVP left so instead of Tortilla Pie I made Sweet Potato Burritos. Oh, and I when I went to do the falafel (which hadn’t yet expired) they were mouldy. We had mexi-bean wraps instead. So I bit of improvising went on. Another easy week coming up.

Last weeks menu plan went really well. Tuesday nights dinner from the garden was delicious. For our BBQ on Sat night Kevin felt like having a pepper sauce on his steak so we bought a gravox mix at the shop. I had it over a veggie pattie and it was very nice. Quite a few easy meals this week to use up some things we have on hand.

Last weeks plan went very well. I forgot we were going out on Wed night so I moved a couple meals forward. The pumpkin lasange was a great success for our night away. It was much easier than stuffing the cannelloni shells (which I didn’t have any of) and I think I’ll be doing it this way from now on. Friday night we ate out with friends. Amy had a friend for a sleepover on Sat night so I did gnocchi in a cream sauce.

Well, I’m still away on vacation but will be home probably this evening (if not tomorrow morning) so I thought I’d better do my menu plan. After a week of incredibly easy/lazy meals I’m looking forward to getting back in the kitchen. Keeping in mind the girls are still on school holidays I’ll be keeping meals simple (as though they are ever anything else). We’re also heading to Canberra on Thurs/Fri with Mum & Dad but I’ll take dinner with us that we can heat up in our apartment.

TUESDAY: TVP San Choy Boy (using box mix)

WEDNESDAY:Lentil, carrot & Cumin Loaf (new recipe)

Last weeks plan went well. We enjoyed the taco pasta salad (was similar to the mexibake but a lot less fat). We still haven’t had the veggie curry (I bought veggie pies from a little bakery I rarely get to) so you’ll see it on this weeks menu plan AGAIN (third time lucky I hope). No new recipes this week as I’m out two night on top of the normal dance run around.

Another week, another menu. This week I’ve recommitted to the Body For Life program so lots of clean, healthy foods for me.

Oh, and the Mexibake from Planning with Kids was DEVINE!!!! Definitely making this again. So easy and so yummy. It does make a LOT though so next time I’m going to half the reciepe.

Last weeks menu plan went pretty well. On Saturday we ended up having take away Chinese and last night we had a warm bean dip with organic corn chips – something light and easy. This week I’m hoping not to have to buy too many groceries so I’m trying to use what I have in the house. I’m also trying to follow Belinda‘s example to try more new recipes.
