Banana Coconut Loaf

Coconut Banana Loaf

This has become the new favourite way to use up ripe bananas. I originally got the recipe from Super Food Ideas.

1 cup desiccated coconut

1 cup castor sugar (I use rapadura)

1 1/2 cups self-raising flour (sifted)

1 cup mashed bananas (3 small)

1 cup coconut milk

1 egg, lightly beaten

1 tsp vanilla extract

Method

Preheat oven to 170 celsius. Grease and line a loaf pan (or spray with oil).

Combine coconut, sugar and flour in a large bowl. Using a fork, beat banana, coconut milk, egg and vanilla in a jug. Pour over flour mixture. Gently stir to combine.

Spoon mixutre into pan and bake for 1 hour 10mins or until a skewer inserted into the center comes out clean.

Stand for 10mins in pan. Turn onto wire rack to cool completely.

NOTE: Loaf will keep for up to 1 week stored in an airtight container. (if it’s not eaten before then)
