Yep, I do realize this is a day late. Oops. I decided that instead of doing Menu Plan Monday I’ll do Foodie Friday so I can share what we actually ate during the week, plus hopefully some recipes (though none this week). I’ll also share groceries, new food finds, and snapshots of our fridge. Hoping this will help me keep focused on eating as healthy as I can.
I did a HUGE grocery shop this week – which included a major restock of the pantry and fruit and veg. I took photos this week but please tell me if you’d prefer to see a grocery haul video.
This weeks meals included Chili Con Carne (made with Quorn mince). I served mine with quinoa rather than corn chips.

And I served fajitas when Amy had a friend to sleep over….
I tend to struggle a bit (since we’re vegetarian) with what to serve when the girls have friends over. Standbys include mac ‘n’ cheese, risotto, homemade pizza, and filled pasta with tomato sauce. What do you do when feeding people you don’t know all that well? Do you just serve what you want or do you make something special?
