The poor fridge is looking a little empty this Friday – which is probably a good thing as we’re going to Sydney for the weekend. This week I did a couple of shops, including one at Woolworths so I could get some of Macro vegetarian bites – which we love.
Fruit and veg top up….
On Saturday we had a special Australia Day BBQ lunch with Nan, Pop and Granny.
The star was damper from Baker’s Delight…which we look forward to ALL year long….
Desert was pavlova…..yum!!
Amy made a special dinner for us on Sunday night. There was a vegetarian lasagne, baked tomatoes, garlic mushrooms and sweet potato fries. All so yummy.
There was also a special lunch out at local cafe for Amy and I (Christy was back at school).
We decided on 3 dishes to share…
Mushrooms with truffle oil and feta cheese….
Bruschetta…
and my favourite….the cheesy potato croquettes…
Other meals this week included salad (with veggie bites)….
Soy fillet with mushroom Sauce and brown rice….
Quorn Snitzel with veggies….
There was a cheese plate on our lazy, wet Sunday afternoon….
Pikelets with jam and cream for afternoon tea. I’m trying to serve a proper afternoon snack for the girls every day after school. Mostly it will be fruit but occasionally something yummy like this.
Kale chips…. see I told you it would be mostly healthy. Both my girls LOVE these.
And this week Australian Afternoon Tea was my tea of choice.
I didn’t manage to do a proper menu plan this week but hopefully now that the girls are back at school I’ll get it done next week. Dinner is so much easier when you know what you’re having and have all the necessary ingredients at hand :-).
Libby, your food photos look fantastic. The Australia Day pav looks amazing, and hat’s off to Amy for her efforts.
Hi Libby, all your food photos look great and so yum. Amy did a terrific job with the meal she made. I have been enjoying trying the different Quorn products. Those vegie bites from Macro look good, I very rarely manage to get to a Woolies, but next time I do, I will look for them. Pavlova is my absolute favourite. Thanks for giving me a few more meal ideas.
Everything looks very very yummy. Although Im not keen on kale chips, I made two huge batches up last year one plain and one with parmesan sprinkled on it. We could eat the chese ones just but dont think I’ll try that again. I am going to try kale in a salad, Im not ready to give up on kale just yet lol
Yummy. I love the look of your lunch out with Amy.
