A saucy dinner

Up early today and headed out on a walk. It was cold and drizzly so a cup of tea was in order upon our return.

Later I made pancakes for Christy since we had no bread. I decided to have one too – topped with banana and maple syrup.

After I dropped the girls at school I headed to gym for a cardio workout. 20mins on the eliptical and 10min on the bike and I was a sweaty mess. Home for a shower and a chocolate protein shake.

Then I was off to get the groceries. Had to visit both Coles and Aldi today. Lunch was a black bean burger on country grain bread with tomato, cucumber and some cheese.

Afterwards I finished the chocolate bar I nibbled on while shopping :-).

I was in a real funny mood this afternoon so found myself wanting to nibble and snack. I tried not to. I had some crackers and cheese for my planned snack.

There was also a few handfuls of tiny teddies :-(.

Dinner was roast vegetable pasta.

I wanted to improve on the tomato sauce so I cooked up some grated carrot, zucchini and sweet potato, with some baby spinach added at the last minute.

Then topped with the jar of sauce.

Served over the pasta with a sprinkling of cheese. Delicious.

I wanted some ice cream but opted for a low fat Billabong instead. Hoping to be in a better mood tomorrow.

 

A productive day

Woke up at 6am with a rather sore back this morning. It tends to get sore when I sit around for long periods of time like I did over the weekend :-(. Oh, well, guess it stops me from being too lazy as I know I’ll suffer later. Anyway, I was out the door with dogs while it still dark but light enough to see safely. I love walking at this time of day – mind you we were too early for the best part of the sunrise :-(.  It was cool out this morning and I had to wear long sleeves AND a jacket.

Back home and getting ready for the day. We saw Amy off – she’s going to camp for the rest of the week and Kevin was dropping her at the train station. Christy and I enjoyed a very quiet breakfast together – she had french toast and I had two of the leftover oat pancakes with some raspberry jam.

Once Christy headed off the school I got stuck into the housework. Once I was done I had a green smoothie before heading off to get my groceries. I spotted this yummy looking salad and have printed up the recipe to make another day.

Back home with the groceries. I got everything unpacked and put away. Then it was time for lunch. I had hoped to make the above mention salad but I was too tired at this point so just made the usual. Todays featured topping – leftover Mexican Rice from last night. Tasted good.

This afternoon I managed to do a bit of scrapbooking while enjoying a cup of tea. I wanted a little “something” so had an ANZAC cookie and small dark orange chocolate bar.

Later, around 4pm, I had a piece of cape-seed bread with hummus and cheese. I put the grapes from Christy’s lunch in a bowl and munched on them a bit later.

It was a quiet dinner with Amy being away. I planned an easy dinner of microwave potato topped with mexican beans, cheese and bit of sour cream.

Later I enjoyed a cup of tea with a banana goji berry muffin (defrosted from the freezer) and some dark chocolate.

And just before going to bed I had a handful of rice crackers – left over from Christy’s lunch!

Lazy Monday

Last nights as I was reading Happy Foody and saw a new pancake recipe. Sounded like the perfect thing for tomorrows breakfast so I went and got it started.

Had a bit of a restless night and woke up with sore back. Put off doing some exercise thinking we might do something later in the day – being that it’s  public holiday for ANZAC Day and we’re all home. Had a cup of tea while reading blogs.

Around 8am I finished off the pancakes and made up a normal batch for the others or in case mine for were a flop (like the last batch of “healthy” pancakes I tried). These, however, were just beautiful. I had mine topped with some banana and maple syrup. Kevin tried one after the “normal” one and said it was pretty good too. Will definitely make these again – though I did have to add some milk to get the right consistency. They looked so good I dove in before taking a photo :-).

Pottered around this morning while the kids and Kevin were playing games on the computer. I also helped Amy pack for the school camp she goes on tomorrow. Around 11am I had some cruskits and cheese (with a cup of tea :-)) and after an ANZAC cookie.

I then worked on my crochet for a bit – I’m trying to make fingerless gloves!! No-one could decide what they wanted for lunch today so we all ended up with something different. Kevin had a chip (crisp) sandwich!!!, Christy a cheese roll, Amy a cheese sandwich and I had a salad (surprise, surprise) with a leftover lentil burger from last night. Also added some leftover onions – yummo!

Spent the afternoon working my gloves – have finally got it worked out, and plans for our UK trip – now finalizing our plans for Scotland. Snack was some cheese, dip and crackers – shared with Kevin.

Dinner tonight was a new recipe – Mexican Rice. Turned out pretty good but I’m not sure I’d make it again as it’s quite similar to other meals we have.

Back to normal with work and school tomorrow – and housework/groceries for me!
