Tofu & Veggie stir fry with peanut sauce

 Adapted from recipe by Vegan aloha kitchen Serves 2-3 people

2 cups  rice

Packet Firm Tofu (cut into cubes)

4 cups mixed vegetable (ie. onion, mushrooms, bok choy, capsicum, broccoli)

Peanut Sauce 

1/2 cup  peanut butter

3 tbsp soy sauce 

Sweet Chili Sauce to taste(approx 1/4 cup)

Prepare rice according to the package instructions 

Cut tofu into cubes, spray with some avocado oil and sprinkle with herbamere or garlic salt.

Cook in air fryer approx 10mins or in frying pan.

In a small bowl mix peanut butter and soy sauce until the mixture is combined. Add sweet chilli sauce to taste

Saute mixed vegetables over medium heat until lightly brown

Add in tofu &  peanut sauce and mix until coated 

Serve over rice and enjoy. 

Great additions to this dish include: garlic, basil, ginger or crushed peanuts if you have them on hand. 

Friday dinner failure

ANOTHER slow start to the day – I just can’t get my butt moving in the morning these days. Started the day with a cup of tea and one and half oatmeal cookies.

Later breakfast was 4 cruskits with spreadable cheese before heading out the door for a before school meeting with Amy’s teacher. The meeting went well and Amy’s teacher is trying to find ways to challenge her at school and stop her from being bored. After the meeting I listened the kids read in Christy’s class, then went and filled some orders for the uniform shop. Last stop before returning home was returning a book to the library.

I made another cup of tea and grabbed 2 cookies for morning tea. I took this over to Mum’s and Dad’s (next door) to show Dad all the info that had come in about the motorhome we are hiring in the UK.

Todays lunch was a bowl of cheesy potato chowder.

I was a bit munchy this afternoon so also had a small bag of popcorn.

Tonights dinner was supposed to be vegetable korma. But unfortunately I managed to burn it and turned to mush. We tried it…

but it didn’t taste real good so I went back to the kitchen to make dinner no.2. Tofu slabs, basmati rice and sweet potato. Much better.

We ate this while watching Braveheart (as the girls had dinner at Nan’s). Great movie but I bailed again at the end (when he gets tortured) – I only ever watched that part once at the movies (and was VERY close to leaving the theatre). Needless to say I’m not planning to visit any dungeons in the UK!

An orange kind of Monday

Woke up around 6.30am with a sore throat and achy head. I still got up and dressed but instead of doing my normal workout I opted to do Val’s SAS-E workout. I did 2 sets of 2 different workout and funnily enough I felt quite good once I got started.

Post workout I had one egg – scrambled – and an orange (to boost my vitamin C levels).

Once the girls headed to school I showered, had a cup of tea and got on with cleaning the house.

Mid-morning I had some corn thins with hummus and a sprinkling of cheese. Would have been satisifed with 2 but ate the 4 I had prepared.

No salad for lunch today – as it’s finally turned cold. Instead I had red quinoa, tofu and some pineapple (leftover from the BBQ the other night) – served in an orange bowl. It was very yummy.

When Amy came from school I had some orange coloured pumpkin soup and later a nut bar. Started feeling worse as the afternoon wore on :-(.

Amy made a granola bar so while I was chopping up almonds I decided to make a breakfast cookie for tomorrows breakfast…served on an orange lid. And into the fridge it goes.

I was feeling like something but not really sure what. I was cold. My head and body hurt. I opted for a choc nut bar and cup of tea.

Amy was nice enough to make dinner tonight. She made a delicious frittata with fresh from our chicken eggs, sweet potato, corn and cheese.

I ummed and ahhed about going to tonights school P&C meeting but decided I should go (since we’ll be overseas when the next two are on). Unfortunately it was longer meeting so I was really flagging by the time I got home. Instead of my normal tea I decided to have a hot chocolate – made with low fat organic milk and some organic hot choc. mix. I heated the milk in the coffee thing so it went lovely and frothy. Total indulgence and totally hit the spot. Nothing like a bit of comfort food when you’re feeling poorly.

Another fantastic day

Another 6am start. Before heading out the door I started a loaf of bread in the breadmaker, then set off  for a  walk with the dogs. I was rather underdressed this morning as it was quite cold outside. It was still nice but my ears hurt by the time I got back. I warmed up with a cup of tea and a couple of crusktis and spreadable cheese.

Later I had a most unusual breakfast. A lentil pattie topped with BBQ sauce, a sprinkling of grated cheese and some tomatoe slices. Yum, yum!

Once I dropped the girls at school (had to drive them today as both are under the weather) I headed to the gym for my cardio workout. I did 20mins on the eliptical and 20mins on the bike. It was a hard slog but I got it done and burnt up over 380cal in the process.

Came home just in time to catch the delivery man delivering my new pots :-).

The only problem with doing such a workout is that I really am quite exhausted for some time afterwards. I did manage to cook some quinoa in my new pot for todays lunch, do a bit of ironing and  I also sewed up a breadbag.

Around 1pm I was hungry enough for lunch. I had the red quinoa I’d cooked earlier, the last of the roast vegetables and some tofu with ketsup manis (love this). I ended up leaving a bit of everything.

Around 4pm I had some vegetable soup and corn thins with hummus.

Then it off to the groceries while Christy was at singing lessons. Back home I was rather hungry and dinner was not quite ready, so I finished off the hummus with a handful of vegetable tortilla chips.

Dinner tonight was Caribbean, Sweet Potato and Kidney Bean Hotpot. I didn’t have any curry so used cumin. I also subbed four bean mix for the red kidney beans, and served with some basmati rice. It was delicious.
