Muffin Tin Monday

This week’s muffin tin was supposed to have a green theme (for St. Patricks Day), but with Amy having been unwell and Christy not eating a single thing that’s green, I just decided to go with a normal tin – I did however, add some kiwi fruit 🙂

Today tin included carrot, crackers, corn relish dip, cheese, cheese balls (which Kevin bought – I NEVER buy those things), teddy biscuits, chocolate, apple, coconut banana loaf, caramel popcorn and the star, kiwi fruit.

You may have noticed I didn’t post a menu plan last week. I actually had fun just deciding meals on the day – based on what I had in the house that needed to be used up. But this weeks it’s back to planning.

MONDAY: Potato Gnocchi with Cheesy Sauce

TUESDAY: Pumpkin Lasagne

WEDNESDAY: Lentil Bolognase

THURSDAY: Tofu with Orange Sauce and Brown Rice

FRIDAY : Out – probably Noodle Box (wedding anniversary)

SATURDAY: Homemade Rice Paper Rolls (girls away)

SUNDAY : BBQ or from freezer

It was very hot here today so after walking home from school everyone was feeling rather warm. The kids quickly devoured the nice cool fruit before diving into the pool

The theme for this weeks Muffin Tin Monday was Fruits & Veggies, Dips and Spreads. Was easy for me as we usually have afternoon tea along these lines anyway, but this week I did make a chocolate dip with fruit. I should have taken an after photo. All that was left was a couple of carrot sticks, some strawberries (which were from our garden) and some kiwi fruit. Make sure you visit this weeks host Just for Fun to see more great MTM ideas.
