Menu Plan Monday

Another good week on the plan – mind you it was an easy one with a lot meals coming from the freezer. I did quite a bit of baking on Friday and will share those recipes very soon. This week I’m trying a few new recipes and doing some more freezing for our upcoming trip. Also want to make Bel’s homemade custard and Ann’s cheesy bread rolls.

Oh, and I finally made tortillas at home. They were yummy but a little on the thick side – will use less baking powder next time. Also need to work on their shape :-).

MONDAY : Lunch – BBQ organic sausages (veggie patty for me), eggs, onion, pineapple

Dinner – Cheesy Potato Chowder from Kate at Our Red House

( I made this yesterday for lunch and it was delicious)

TUESDAY : Pasta with Creamy Mushroom Sauce by Belinda Moore

WEDNESDAY : Corn Quiche (make 2 – one to freeze)

THURSDAY: Mushroom Tortellini Bake (new recipe)

FRIDAY: Hunan BBQ Stirfy with tofu and brown rice (new recipe)

SATURDAY : Mexi-Bean Spuds

  1. The tortillas look YUM. I hope you like the mushroom sauce. I edited it tonight to 2 tablespoons of cornflour as when I added 3 it was too thick. I am sure I used 3 last time, but maybe they were dessert spoons? :p Anyway, thought I’d let you know that I changed it.

  2. Ooh, cool on the tortillas. I love to make homemade tortillas myself- with corn tortillas I have this handy little press that makes it lots faster. 🙂
