Quite a few of you (either here or facebook or twitter) were interested in the kale chips I made last week so I thought I’d snap a few photos when I made some more yesterday. It really is so easy. The hardest part, for those in Australia, might be buying the kale. I get mine in my organic delivery from Doorstep Organics.
This week I got black kale (above is the green Scottish kale).
First step is to wash and thoroughly dry. I use a lettuce spinner, then spread out on a tea towel and allow to finish drying.
You need to remove the leaves and discard the stem (I do this while washing) and break into chip size pieces. When the kale is dry spread onto baking trays (being careful not to overlap the leaves too much) and spray with olive oil (or use hands to gently massage over leaves). Then a little sprinkle of sea salt.
Then bake on 150 C or 350 F for 8 – 10mins. They are lovely and crispy when they are done and just crumble in your mouth.
Christy and I prefer them just cooked but Amy likes them best the next day when they are little more chewy. Either way they are delicious, and oh-so good for you.
Let me know if you give them a try and what you think of them.
As I um and ah about continuing with scrapbooking I’ve realized it really is my therapy. Making layouts makes me happy. I’ve signed for LOAD512 and I find scrapbooking daily really helps to get my creative side going again. Plus in the class you get a prompt for each day. This is the layout for the day 1 – self portait. I journalled about learning to live with arthritis.
In the last few weeks I’ve also created some VERY simple layouts.
Christy’s 10th Birthday….
Halloween….
and Kevin’s trip to San Fransicso… need to get a title or letter stickers for this first one…
Is anyone else taking Lain’s class?
It was a very quiet week, with the girls going back to school on Tuesday, then having Wednesday off for Anzac Day. Kevin did renovation work at the office over the weekend so I did lots of planning for our Disneyworld trip. Other than that it was the normal day to day stuff around here.
It was the week of daily trips to the the lake, which is actually clean enough to allow the dogs to swim at the moment….
Not sure where Bailey was swimming to?…
There’s always lots of birds down by and in the lake….
It was the week of more time spent in the kitchen making things like kale chips… for the first time ever…and boy were they yummy….
and homemade tortilla, which look horrible, but tasted devine…..
It was the week I played scrabble for the first time in over 10 years….
the week I received this gorgeous card from Lisa...
and the week I took LOTS of puppy photos…
Hope you all had a good week.
