You may have noticed I didn’t post a menu plan last week. I actually had fun just deciding meals on the day - based on what I had in the house that needed to be used up. But this weeks it’s back to planning.

MONDAY: Potato Gnocchi with Cheesy Sauce

TUESDAY: Pumpkin Lasagne

WEDNESDAY: Lentil Bolognase

THURSDAY: Tofu with Orange Sauce and Brown Rice

FRIDAY : Out - probably Noodle Box (wedding anniversary)

SATURDAY: Homemade Rice Paper Rolls (girls away)

SUNDAY : BBQ or from freezer

It was very hot here today so after walking home from school everyone was feeling rather warm. The kids quickly devoured the nice cool fruit before diving into the pool

Muffin tin Monday

The theme for this weeks Muffin Tin Monday was Fruits & Veggies, Dips and Spreads. Was easy for me as we usually have afternoon tea along these lines anyway, but this week I did make a chocolate dip with fruit. I should have taken an after photo. All that was left was a couple of carrot sticks, some strawberries (which were from our garden) and some kiwi fruit. Make sure you visit this weeks host Just for Fun to see more great MTM ideas. Muffin Tin Monday for one

I actually forgot to photograph todays muffin tin but this is the one from last week. It was just for Amy as Christy was unwell. She had cheese, dip, carrot, crackers, a homemade cheese scroll and a piece of peppermint chocolate.

Last weeks menu plan went well. There was a hitch one night when I didn’t have any TVP left so instead of Tortilla Pie I made Sweet Potato Burritos. Oh, and I when I went to do the falafel (which hadn’t yet expired) they were mouldy. We had mexi-bean wraps instead. So I bit of improvising went on. Another easy week coming up.

MONDAY: (SO HOT!!!) Kids - toasted sandwiches, adults leftover frittata

TUESDAY: Fried Rice with tofu

WEDNESDAY: Corn Quiche

THURSDAY: Chili Con Carne with Organic Corn Chips

Well, it’s time again for Muffin Tin Monday. The girls loved doing it last week and Christy in fact made her own snacks using muffin tins a couple of other times during the week - which is great for a fussy eater like her.

Todays theme was breakfast. Monday wasn’t the best day for us to it but I managed (after getting back from an early morning workout at the gym) . We had french toast fingers, pikelets with jam and cream, babybell cheese, fruit and a few chocolate biscuits (well, the kids did). There was also yoghurt for Amy but she didn’t eat it. Once again the girls thought it was great fun and have already asked if we can the snack one on Tuesday afternoon as well.

Yes, I know it’s Tuesday here in Australia but Tuesday’s work better for us as both girls have dancing on Monday. I saw this idea on one of the blogs I read and think it’s great. Today was the first time I participated and the girls loved it. This week it was hosted at Franny Kates Creative State.

I did one tray of savory and one of sweet. At the end, some celery and 3 grapes.
