Muffin Tin Monday at Her Cup Overfloweth

Well it’s been some time since we participated in Muffin Tin Monday but I thought it might be fun to get back to.

Todays muffin tins (shared by the 3 of us after school) included rice crackers, boiled egg with mayo, crackers, corn relish dip, babybell cheese, carrot, banana coconut loaf, watermelon, some Aussie m&ms and some milky way stars (from the UK). The pickings were a little on the slim side as I only decided to this in the morning.

This is definitely a fun way to have afternoon tea. And Christy even OFFERED to try some babybell cheese :-) .

Not too sure how this not menu planning is working out but we’ve not resorted to take-away so it must be going okay. Having said that last week was a very strange one with me being unwell for the whole week, so easy dinners were definitely on the cards.

TUESDAY: TVP Wraps

Mexi-Bean Burrito

WEDNESDAY: Take-away pizza for my birthday

Birthday dinner

THURSDAY: Pasta & Veggies (from freezer) – was quite nice and certainly VERY easy

SUNDAY: Homemade Pizza at the Powells – similar to this one.

Todays muffin tin theme was letters.

I went with the very basic A-B-C-D-E-F. But as always the girls loved it.

Amy had apple, banana-choc muffin, chips/crisps, dip (& carrots), extra-large frog (souvenier from Melbourne) and freckles.

For this weeks MTM we got to choose our own theme. I chose to do make you own ice-cream sundae’s. The girls couldn’t believe it!!! It’s not every day you get to come home from school and eat ice cream.

This was my creation.. was delicious too.

muffin tin monday logo

This weeks muffin tin Monday had an UNDER THE SEA theme. I did try to think about this one (and do some research on the net) to make it more fun for the girls. When they saw the muffin (esp. Amy’s) I asked them to guess the theme -  Amy got it right away. It’s school holidays (for two more days) so it would going able to make a lunch, rather than a snack.

Amy's muffin tin

I started with the obvious fish pieces shaped like a fish ( it was hard trying to find ones with REAL fish fillets), then added some potato gems (they are my imitation rocks), some shell pasta, tomato ketchup (not really sure what that represents in the ocean), green jelly with some sea snakes and I just couldn’t resist these blue cupcakes when I saw them at the bakery.

Christy’s muffin tin did not look quite so exciting. She wasn’t that pleased but I had to point out that she’s the one who won’t eat real food. She didn’t even touch the pasta or potato gems and had more toast. She didn’t eat her cupcake – so I enjoyed that for afternoon tea :-) .

We were very spoilt today and Amy made us a special MTM breakfast.

Muffin tin goes AWOL

Not sure if I’m going mad or things got changed when I wasn’t looking. I thought the theme for this weeks MTM was MTM goes AWOL. Since we don’t have time on a school Monday to do anything fancy I thought I’d take the muffin tin with us to White Water World. I see the theme MTM goes AWOL is on the 20th – school holidays for us – so we’ll take it on another outing.

The girls thought it great having MTM at the water park and Kevin was pleased he got to participate in one for a change. Because I only had one muffin tin it did require quiet a few refills. Here’s Kevin with the leftovers :-) .

Empty muffin tin

We did another MTM today. Today theme is supposed to be Spring/Easter but I only just saw that after we’d eaten ours. Luckily I did include some little chocolate bunnies as we’ll be away again next week. We also had the usual dip, carrot, crackers, cheese, chips, fruit and tiny teddies.

All we had left was some kiwi fruit, which Bailey (dog) enjoyed.

Muffin Tin Monday

Tuesday, March 17th, 2009

This week’s muffin tin was supposed to have a green theme (for St. Patricks Day), but with Amy having been unwell and Christy not eating a single thing that’s green, I just decided to go with a normal tin – I did however, add some kiwi fruit :-)

Muffin tin monday

Today tin included carrot, crackers, corn relish dip, cheese, cheese balls (which Kevin bought – I NEVER buy those things), teddy biscuits, chocolate, apple, coconut banana loaf, caramel popcorn and the star, kiwi fruit.

Christy likes to play with her food more than eat it.

For more muffin tins, and some great green ones, visit her cup overfloweth. If any of your kids suffer Mondayitis I definitely recommend giving MTM a go – my girls just love coming home from school to see what’s in the muffin tins.

TUESDAY: Pumpkin Lasagne

WEDNESDAY: Lentil Bolognase

THURSDAY: Tofu with Orange Sauce and Brown Rice

FRIDAY : Out – probably Noodle Box (wedding anniversary)

SATURDAY: Homemade Rice Paper Rolls (girls away)

SUNDAY : BBQ or from freezer

Muffin TIn Monday

It was very hot here today so after walking home from school everyone was feeling rather warm. The kids quickly devoured the nice cool fruit before diving into the pool
