Well, I’m back from vacation and right back into menu planning. The fridge and freezer is VERY empty so I’m just going to a quick emergency trip today and a proper shop tomorrow – when the girls are at school.
We ate all but one of the frozen meals we took on holidays and only ate one dinner out – that I can remember anyway. Hence the scales had a good report – I actually lost 0.2kg in the last 4 weeks.
Anyway, it will be an easy week meal wise – DH is still away and I think I’ll be suffering a bit of culture shock being home and into my normal routine.

TUESDAY : Chickpea Burger (Fish) & Veggies
WEDNESDAY: Pumpkin Cannelloni (Amy’s request)
THRUSDAY: Rissoto
FRIDAY: Vegetable pies
SATURDAY: Filled veggie pasta with cheesy sauce
SUNDAY: Bean nachos

You’re back! Yummy menu this week – looks like great winter warming foods. And lots of cheese – mmmmmmmmmmm. Have you tried making your own mexe beans yet? I answered you with my method in the comments the other week… The vegetable pies sound yummy, are they easy?
Your photos are great. I think I should get into taking photos of our meals, before they’re devoured. That gives me a few short minutes to find the camera! 🙂
