Monday-itis

I had a great start to the morning. I’ve been really enjoying my early morning walks with the dogs and my heal spurs have been behaving so I’m going to try walking every day and see how things go. In order to still fit my Red Carpet Ready workouts in I’m going to split them up – doing upper body one day and lower body the next. Today was lower body. This will give me more cardio while not missing out on the strength training. Felt great when I was finished. Of course, that meant it was green smoothie time. Sorry Bailey – no leftovers for you today.

Didn’t really like finding my kitchen like this….but at least it was all clean…

Both the girls weren’t feeling the best this morning so I ended up driving them to school. When I got back I had a couple of cruskits with spreadable cheese and a cup of tea, then got on with cleaning the house.

With cooler night forecast later in the week I decided it would be a good day to put the loungeroom into Winter mode and drag out the gas heater.

I was feeling a bit flat today and continually couldn’t decide what I wanted to eat. Unfortunately I spotted the box of chocolate dipped tiny teddies. It started with a handful for morning tea….

we won’t talk about how many more handfuls were consumed throughout the day.

Couldn’t decide what I really wanted to for lunch so just made a salad – todays featured some leftover marinated tofu, pinenuts and squirt of mayonnaise.

Followed a bit later by tea and chocolate. It is that time of month so maybe that’s why I was a bit more munchy today.

After picking up the girls from school I made some pikelets. Trying to do something right I had a couple of corn thins with hummus…

Dinner tonight was lentil patties with cauliflower and corn. Delicious!

Plans gone astray

It was  a beautiful Sunday here – definitely more Summer than Autumn. I started the day with what else but a cup of tea and a piece of banana cake :-). Everyone played on their computer until Amy decided she would make us breakfast. How lucky am I? It’s not even Mothers Day till next Sunday.

She made us scrambled eggs, tinned spaghetti and toast. Served on our special plates :-).

We had planned to go on a bike ride and have lunch out but at about 11am I started feeling icky in the stomach and a bit light-headed. I had some cruskits with cottage cheese to see if that helped.

It didn’t – so I tried some chocolate – thinking maybe some sugar might do the trick. It didn’t work either so we decided to stay in for the day.

I didn’t really feel like eating but made myself have a salad (featuring falafel and homemade hummus) around 2pm.

I did start to feel better which was good. I was able to enjoy some afternoon tea.

We put on Avatar to watch and the girls decided they wanted popcorn. I wasn’t go to have any (since I’d already had the above) but it smelled good so I had a little bowl.

We ended up having a late dinner. It was new recipe tonight – tofu & noodle stir-fry – which was a bit too fiddly for a Sunday night. Amy didn’t like it. I thought it was okay. Kevin really enjoyed it.

Simple Saturday

Very hard to get out of bed again this morning (hands and feet sore and swollen again) but I did. And I even managed to talk Kevin into coming for a walk with me and dogs this morning. It was nice to have some human company and good chance for us to have a chat.

I made the girls some French Toast for breakfast and decided to have a slice myself. We have ours the Scottish way – with tomato ketchup. Yum.

I then got busy in the kitchen – making bread (for the girls lunch), some lemon cookies and hummus. Christy had a friend over to play and Amy occupied herself on the computer.

Mid-morning I had a cup of tea , a banana and slice of banana cake. I’m trying to teach myself I don’t have to have a cake/cookie with every cup of tea!

I was playing with my new DSLR (Kevin’s spare camera) and the camera was set right so the photos are VERY yellow!

Lunch today was a salad with egg and the homemade hummus.

Amy photographed her lunch today as well. She must have been hungry when she prepared this but only ate 3/4.

This afternoon I played on the computer – working on our holiday plans. I sampled a few of the lemon cookies

and later served some hummus with turkish bread and veggie chips for Kevin & I to munch on.

After a spa and more computer time we had another easy dinner of leftover Mushroom and Potato soup with a chunk of homemade bread. So hard to get decent lighting at the dinner table when it’s dark outside.

I hadn’t planned on having ice-cream tonight but when I had to dish some out for Christy I weakened and did a bowl for myself. Tonight I grated a block of Cadbury fairtrade choc. which was SOOO yummy on the ice cream.

Off to class

This morning I struggled to get up and get going with my planned exercise – but I did it and felt better for it. Afterwards I enjoyed a green smoothie.

Then it was time to pack for class.

I was so excited about this vegetarian cooking class and it did not disappoint. I came away full of knowledge and a new found confidence. Great stuff.

We made, and sampled, a number of dishes.

My favourite was the hummus and salad.

Finally we had Vegan banana bread. Goodness this was fantastic. The top had gotten burnt and was cut off.

Totally loved the class and can’t wait to go to more. When I left it was time to go pick up Amy from the train station as she was coming home from camp. Then a quick shop in Aldi. I was hungry when I walked in the door, so had a bowl of Mushroom & Potato soup while chatting to Amy. Christy arrived home from school shortly after and joined us at the table.

I was thrilled to find some bananas in the freezer so was able to make some banana cake from todays class :-).

Around 5pm I had a banana and cup of tea. I also used to have a “treat” with my tea but I’m trying to teach myself that fruit and tea is okay as well :-).

Tonights dinner was courtesy of the freezer – samaosas & brown rice, with some Turkish bread and leftover pad thai (from class).

Supper tonight was, of course, banana cake. Everyone enjoyed it so it’s a real winner of a recipe. I also enjoyed the very last ANZAC cookie.
