**** I believe some of my readers have been wondering about Muffin Tin Monday. I had hoped to start back with them again but our Monday afternoons are just CRAZY. I have 3 different things to take the girls to and from between 3.30 and 5.30pm. I’m hoping to still do something in the muffin tins during the week since the girls loved it but we’ll have to see.

Menu Plan Monday

MPM christmas

Need to get some fresh produce used up so thought I’d better do a menu plan this week.

MONDAY: Takeway Chinese (Amy’s friend over and I know she eats this)

TUESDAY: Zucchini Slice (using first zucchinis from the garden)

WEDNESDAY: BBQ (friends over for NYE) – Organic Meat, potato salad, chinese noodle salad, some other dish

THURSDAY: Leftovers (friends over for lunch)

FRIDAY : Out for dinner before basketball

SATURDAY: From freezer (going out for lunch)

SUNDAY: Veggie bake????

All I can say is so much for using up fresh produce. Might have to make some hot lunches this week, but being school holidays that’s not likely to happen.

Recipe : Granny’s Shortbread

Granny's Shortbread

This is my Granny’s recipe for shortbread. Since she’s Scottish it’s the real deal. Everyone who tries it loves it. And it really is easy to make..

You will need:
250g of plain flour
125g rice flour
125g caster sugar
250g butter, room temperature

METHOD:

1. Preheat oven at 170 degree

2. Sift flour,  rice flour and sugar into bowl.

3. Add butter and work well until soft and pliable, but not oily.

Muffin TIn Monday

It was very hot here today so after walking home from school everyone was feeling rather warm. The kids quickly devoured the nice cool fruit before diving into the pool
