Tropical Muffins

Kevin and Amy were off for a day painting his office but they were kind enough to wait till I got back from the gym. Before I left I had a snack of corn thins with cottage cheese. I wasn’t really in the mood to eat just yet but knew it would be best before such an intense workout.

It’s been a long time since I’ve been on a Saturday morning and I surprised to have the cardio room to myself. It was just after opening at 7am but I was still suprised. I did 20min on the elliptical and 20mins on the bike. Back home I cooled down and had a shower. Around 9am Christy woke up so I made her some french toast for breakfast and I had an egg on toast with a cup of tea.

Since breakfast had been so late I didn’t bother with a morning snack, instead I had a very punctual lunch of leftover salad, a heaping of hummus, a boiled egg and slice of turkish bread.

I really thought I’d be wanting to eat today but I wasn’t bothered. I had some grapes around 3pm.

Then around 4pm a tropical muffin as seen on Oh She Glows. Yummy and healthy! Kevin and Amy enjoyed them too.

Around 5.30pm I was hungry but with dinner time fast approaching I decided on a green smoothie as I was a bit low of fruit & veg today.

Of course, then I didn’t get hungry again. Amy had eaten around 6pm and Kevin wasn’t feeling too well so eventually around 7pm I decided to have my dinner. It was Mexican Rice – brown rice, TVP, corn, black beans and seasoning- topped with tomato and some sour cream. It was a little bland though and I didn’t really enjoy it much. I ate about 2/3.

Funny food Friday

Today I bounded out of bed ready to tackle another I want my bikini body workout. Good stuff indeed. Then it was time for a green smoothie.

It was a hectic morning as we all had to be out the door at 8.30am so breakfast was packed to eat in the car. I had a small multigrain sandwich with spreadable cheese, tomato and cucumber.

I bought a skim iced choc and salad for lunch but I didn’t end up eating the salad. Strangely enough I really didn’t feel much like eating today. Shock horror!!

My afternoon snack was another green smoothie.

For tonights dinner guests I served some nibbles. I had mainly hummus and vegetables, plus a few tortilla chips and a few pieces of cheese.

Dinner was a BBQ with baked potatoes, sweet potatoe, pineapple, onion and my new favourite salad.

I really didn’t feel much like desert (apple crumble) but since Amy had made it I felt I should have some. It was yummy and I ate about 3/4.

Lastly I served tea and coffee and a platter with some bicuits, dark and milk chocolate and some fudge (bought from the farm last weekend). I had a tea and minute piece of fudge – with was so very yummy.

Woke up this morning ready and raring to get stuck into my I want my bikini body workout. This was the first time I’ve done the new program and it was really good – as always. If you’re looking for a great program you can do at home with minimal equipment be sure to check it, and red carpet ready, out.

Workout complete I made a green smoothie. I forgot to take a photo but I’m pretty sure you know what it looked like :-).

Later I had the half of a breakfast cookie (I’ll post the recipe tomorrow), and then finished it off during the morning as I cleaned the kitchen.

Lunch was salad (surprise, surprise) with egg, pineapple, corn and hummus.

Despite getting hungry throughout the afternoon, I managed to survive by filling up on water and tea. So I really enjoyed my afternoon snack of tofu marinated in catsup manis with some leftover roast veggies. Yummo!!

I was still feeling a bit hungry and so had an apple and a cup of tea.

Our organic delivery arrived – it always looks so good.

I unpacked it and put everything away while making dinner. Tonight 2 soy BBQ sausages – can you believe there is 20gms of protein in those? – and some veggies. I forgo the potato since I’d had some this afternoon.

With all that protein I didn’t need anything more to eat but did enjoy another cup of tea before heading to bed.

Terrific Tuesday

Had a fantastic day as far as food and exercise and feeling good goes. Started off with an early morning walk with the dogs. I was hungry when I got back so had a small snack of 2 cruskits with spreadable cheese.

Later I made a scrambled egg with onion, placed inside some mountain bread with BBQ sauce.

Then it was off to the gym. I decided to ride up with Christy (the school is right next door). I let my membership go in Jan so paid for just 15 visits (that will take me up until we go away). Was nice to be back and see lots of familiar faces. I did 15mins on the bike, 5 mins on rower and 15min on elliptical. Then rode back home. My legs were like jelly when I got home. And my face rather red…

After cooling down I had a shower and made myself a green smoothie.

I made a short 5min video about my recommitment to the Red Carpet Ready program.

 

Lunch was yet another salad with egg and pineapple and new favourite homemade dressing. I also added some pinenuts.

Spent the afternoon playing on the computer and reading. Legs are feeling it after this mornings workout. But I did manage to get a start on some vegetable soup – just chopped up what I could find in the crisper and added some chicken stock (the kind that doesn’t contain chicken!).

A few hours later I was feeling a little peckish so myself a chocolate protein shake. I haven’t one of these in ages – not since discovering green smoothies so it was very nice for a change.

Next it was time for a nice hot bath – to try sooth my aching legs. Then bed with a good book and a cup of tea (courtesy of Kevin).
