Bread making success at last

img_0801

Well, I seem to have done it. Over the last few weeks I’ve tried about 4 or 5 different recipes for bread. To make it easy for myself I want to do the dough in the breadmaker and then bake the bread in the oven.

Yesterday I tried a recipe from Niki at Rural Writings. It turned out great. Rather sweet because of the honey I assume but lovely, moist and fluffy. There was a lot of dough so I made some into rolls and topped some with cheese. Again delicious. They look dark but tasted yummy and the crust is suprisingly soft. Next time I’m going to try with wholemeal flour. If you’re in Australia and want to try this just remember it’s a Canadian recipe so a tablespoon is 3 teaspoons. I also added a tablespoon of bread improver.

Had a pretty successful week last week. The Pasta with Mushroom Sauce was a definite hit – thanks Bel. We didn’t get to the mushroom tortellini bake or the stirfry, and we had nachos instead of the mexi-bean spuds. Still NO LUCK with the bread making – I’ve got another dough just about ready to set to rise so we’ll see how this one goes. I beginning the think homemade bread and me just don’t go together. Some have been okay but none have been anything to rave about and Christy refuses to even try them.

Anyway, onto this week. I’m actually going to be away for the weekend – a scrapbook/relax weekend with some girlfriends. This is our 4th year and I can’t wait.

Another good week on the plan – mind you it was an easy one with a lot meals coming from the freezer. I did quite a bit of baking on Friday and will share those recipes very soon. This week I’m trying a few new recipes and doing some more freezing for our upcoming trip. Also want to make Bel’s homemade custard and Ann’s cheesy bread rolls.

Oh, and I finally made tortillas at home. They were yummy but a little on the thick side – will use less baking powder next time. Also need to work on their shape :-).

Menu Plan Monday

Last week I again managed to stick to the menu plan. Unfortunately the pumpkin and ricotta lasagne was only okay. I did freeze the remainder but Kevin agrees I should just feed it to the chooks – they’ll appreciate more than us :-).

This week I’m planning on doing lots of organizing around the house and since our freezer is full to busting we’ll be digging in their for most of our dinners.

MONDAY : OUT

TUESDAY : Possibly takeaway for my birthday

WEDNESDAY : Bake veggies (inspired by Rhonda at Down to Earth)

THURSDAY : Mini meatloaves (from freezer) with mashed potatoes

FRIDAY : Veggie curry (from freezer – Kevin’s request)

SATURDAY : Vegetarian tacos (or maybe tortillas – still haven’t made them yet)

SUNDAY : From freezer or cheese on toast
