Plans gone astray

It was  a beautiful Sunday here – definitely more Summer than Autumn. I started the day with what else but a cup of tea and a piece of banana cake :-). Everyone played on their computer until Amy decided she would make us breakfast. How lucky am I? It’s not even Mothers Day till next Sunday.

She made us scrambled eggs, tinned spaghetti and toast. Served on our special plates :-).

We had planned to go on a bike ride and have lunch out but at about 11am I started feeling icky in the stomach and a bit light-headed. I had some cruskits with cottage cheese to see if that helped.

It didn’t – so I tried some chocolate – thinking maybe some sugar might do the trick. It didn’t work either so we decided to stay in for the day.

I didn’t really feel like eating but made myself have a salad (featuring falafel and homemade hummus) around 2pm.

I did start to feel better which was good. I was able to enjoy some afternoon tea.

We put on Avatar to watch and the girls decided they wanted popcorn. I wasn’t go to have any (since I’d already had the above) but it smelled good so I had a little bowl.

We ended up having a late dinner. It was new recipe tonight – tofu & noodle stir-fry – which was a bit too fiddly for a Sunday night. Amy didn’t like it. I thought it was okay. Kevin really enjoyed it.

Lazy Monday

Last nights as I was reading Happy Foody and saw a new pancake recipe. Sounded like the perfect thing for tomorrows breakfast so I went and got it started.

Had a bit of a restless night and woke up with sore back. Put off doing some exercise thinking we might do something later in the day – being that it’s  public holiday for ANZAC Day and we’re all home. Had a cup of tea while reading blogs.

Around 8am I finished off the pancakes and made up a normal batch for the others or in case mine for were a flop (like the last batch of “healthy” pancakes I tried). These, however, were just beautiful. I had mine topped with some banana and maple syrup. Kevin tried one after the “normal” one and said it was pretty good too. Will definitely make these again – though I did have to add some milk to get the right consistency. They looked so good I dove in before taking a photo :-).

Pottered around this morning while the kids and Kevin were playing games on the computer. I also helped Amy pack for the school camp she goes on tomorrow. Around 11am I had some cruskits and cheese (with a cup of tea :-)) and after an ANZAC cookie.

I then worked on my crochet for a bit – I’m trying to make fingerless gloves!! No-one could decide what they wanted for lunch today so we all ended up with something different. Kevin had a chip (crisp) sandwich!!!, Christy a cheese roll, Amy a cheese sandwich and I had a salad (surprise, surprise) with a leftover lentil burger from last night. Also added some leftover onions – yummo!

Spent the afternoon working my gloves – have finally got it worked out, and plans for our UK trip – now finalizing our plans for Scotland. Snack was some cheese, dip and crackers – shared with Kevin.

Dinner tonight was a new recipe – Mexican Rice. Turned out pretty good but I’m not sure I’d make it again as it’s quite similar to other meals we have.

Back to normal with work and school tomorrow – and housework/groceries for me!

Let the food blog begin

I have decided to take the plunge in the wonderful world of health food blogging. I get so much out of the blogs that I read that I thought creating my own might help keep me a bit more accountable about what I eat, and maybe even, provide some ideas for my readers – esp, those in Australia, as I am yet to find many Aussie health food blogs (if anyone knows of any PLEASE let me know).

And so…on to our first day. Now is there are a better way than to start the day than with a green smoothie blended in my BRAND NEW Vitamix.

The morning was spent doing jobs around the house and decluttering stuff in my scrapbook room. Mid-morning I had a cup of tea and a handful of …..healthy handfuls. Yes, I know these are made for kids – but I just LOVE them.

It was such a beautiful Autumn day and both girls were out playing with friends so I decided to take my lunch outside.

Most warmer days I have a salad  made up of greens, cucumber, tomato, pineapple- todays was topped with marinated tofu & a squirt of mayonnaise. Delicious. Both the weather and the food.

Around an hour after lunch I like to have a cup of tea and usually something sweet. I debated having two biscuits…

But was really feeling like more crunching so swapped for some cruskits with spreadable cheese…

But I have confess… I did go back for those biscuits later. I also drank many more cups of tea throughout day – rather neglecting my water today :-(.

Around 4pm I was peckish again so had some crackers topped with Camembert cheese – yummo!

Tonights dinner was made up of leftovers – with the addition of some vegetables – as it was just 3 of tonight (Amy was at a sleepover).

Dessert was custard – something I haven’t had in months – as I know it’s not the healthiest. I really felt like some raisin toast but we didn’t have any – guess what I’ll be buying tomorrow :-).
