A productive day

Woke up at 6am with a rather sore back this morning. It tends to get sore when I sit around for long periods of time like I did over the weekend :-(. Oh, well, guess it stops me from being too lazy as I know I’ll suffer later. Anyway, I was out the door with dogs while it still dark but light enough to see safely. I love walking at this time of day – mind you we were too early for the best part of the sunrise :-(.  It was cool out this morning and I had to wear long sleeves AND a jacket.

Back home and getting ready for the day. We saw Amy off – she’s going to camp for the rest of the week and Kevin was dropping her at the train station. Christy and I enjoyed a very quiet breakfast together – she had french toast and I had two of the leftover oat pancakes with some raspberry jam.

Once Christy headed off the school I got stuck into the housework. Once I was done I had a green smoothie before heading off to get my groceries. I spotted this yummy looking salad and have printed up the recipe to make another day.

Back home with the groceries. I got everything unpacked and put away. Then it was time for lunch. I had hoped to make the above mention salad but I was too tired at this point so just made the usual. Todays featured topping – leftover Mexican Rice from last night. Tasted good.

This afternoon I managed to do a bit of scrapbooking while enjoying a cup of tea. I wanted a little “something” so had an ANZAC cookie and small dark orange chocolate bar.

Later, around 4pm, I had a piece of cape-seed bread with hummus and cheese. I put the grapes from Christy’s lunch in a bowl and munched on them a bit later.

It was a quiet dinner with Amy being away. I planned an easy dinner of microwave potato topped with mexican beans, cheese and bit of sour cream.

Later I enjoyed a cup of tea with a banana goji berry muffin (defrosted from the freezer) and some dark chocolate.

And just before going to bed I had a handful of rice crackers – left over from Christy’s lunch!

Lazy Monday

Last nights as I was reading Happy Foody and saw a new pancake recipe. Sounded like the perfect thing for tomorrows breakfast so I went and got it started.

Had a bit of a restless night and woke up with sore back. Put off doing some exercise thinking we might do something later in the day – being that it’s  public holiday for ANZAC Day and we’re all home. Had a cup of tea while reading blogs.

Around 8am I finished off the pancakes and made up a normal batch for the others or in case mine for were a flop (like the last batch of “healthy” pancakes I tried). These, however, were just beautiful. I had mine topped with some banana and maple syrup. Kevin tried one after the “normal” one and said it was pretty good too. Will definitely make these again – though I did have to add some milk to get the right consistency. They looked so good I dove in before taking a photo :-).

Pottered around this morning while the kids and Kevin were playing games on the computer. I also helped Amy pack for the school camp she goes on tomorrow. Around 11am I had some cruskits and cheese (with a cup of tea :-)) and after an ANZAC cookie.

I then worked on my crochet for a bit – I’m trying to make fingerless gloves!! No-one could decide what they wanted for lunch today so we all ended up with something different. Kevin had a chip (crisp) sandwich!!!, Christy a cheese roll, Amy a cheese sandwich and I had a salad (surprise, surprise) with a leftover lentil burger from last night. Also added some leftover onions – yummo!

Spent the afternoon working my gloves – have finally got it worked out, and plans for our UK trip – now finalizing our plans for Scotland. Snack was some cheese, dip and crackers – shared with Kevin.

Dinner tonight was a new recipe – Mexican Rice. Turned out pretty good but I’m not sure I’d make it again as it’s quite similar to other meals we have.

Back to normal with work and school tomorrow – and housework/groceries for me!

Sleepy Sunday

Well, maybe not sleepy but I did spend the WHOLE DAY in my PJs :-).

Woke up around 7am (so a bit of a sleep in for me) and straight to the kitchen for a cup of tea and slice of banana coconut loaf. I also sampled the oat slice from yesterday – it was quite nice but a little sweet.

I had trouble deciding what I wanted for breakfast this morning but eventually decided on an omelette around 9am. I made it using 2 eggs, diced tomato, diced red onion, a handful of spinach and a handful of grated cheese. Twas rather yummy – but too much – I ate about 2/3.

I spent the morning playing on the computer, making ANZAC biscuits (for ANZAC Day) and sorting some photos. At 11am I made a green smoothie. Love those frothy bubbles.

Around 1am I made a salad for Kevin and myself. He had egg, I had falafel and hummus. Today I added some of my home grown sprouts. I wonder if I’ll ever get sick of this combination?

This afternoon I got to work on finalizing more plans for our UK trip in June. Normally sitting working online I’d be eating lots and lots but I really surprised myself today. I didn’t even enjoy my first ANZAC biscuit until 2.30pm.

Around 5pm I was feeling like a little something with a cup of tea. Kevin had one of these tarts he’d bought.

But I was feeling like a crunch so had a couple of cruskits with spreadable cheese :-).

Dinner was courtesy of Kevin, who braved the cool night and cooked us a BBQ. I had a lentil pattie (with a piece taken out for Christy), sweet potato slices, a little potato, pineapple and onion. It was absolutely delicious.

With tonights cup of tea I’ll either have another ANZAC biscuit or one of the chocolates hiding in the back of the fridge.

Great start to the weekend

Thankfully I woke up this morning WITHOUT a headache and managed to stay headache free all day. As soon as I awoke and saw the brilliant orange streaks of the sunrise, I launched out of bed and got ready to go for a walk. Unfortunately by the time everyone was ready (the dogs and Amy) and we got down to the lake we missed the best part of the sunrise but it was still lovely none-the-less. And still so warm for late April.

When we got back I had a glass of water and read blogs for a bit before going and doing the Red Carpet Ready session I missed yesterday. I did SASE – strong again. Next week I need to kick things up a bit I think. Post workout I enjoyed a green smoothie.

Played on the computer much of the morning, in addition to doing things like getting dinner started in the crockpot and making an oat slice (a new recipe).

I had a late breakfast with the family. Only ate half though as the bread had that frozen taste it sometimes gets from the freezer.

Around 11am I had a handful of grapes…

then enjoyed the other half of my smoothie on the way to my book group.

Lunch at book group is often pizza – which it was today. Despite the smoothie at 12pm I was getting hungry again by the time pizza arrived at 1.30pm. I had two pieces of the veggie one. Should have only had one as the pizza today was rather oily and I didn’t feel great after the second piece. I was too self conscious to take a photo – until I found myself alone in our meeting room – luckily there was still one piece left to photograph :-). Yuck – look at the grease – they aren’t normally that bad!

Got home just after 3.30pm and put together an afternoon snack to enjoy with Kevin. I’m not real keen on store-bought dips (except hummus) but this roast capsicum one was rather nice. However, after looking more closely at the ingredient list (compared to the hummus) I’m not sure I’ll be buying it again.

Since we’d had a substantial afternoon snack we didn’t end up eating dinner until 7pm. Unfortunately the crockpot meal was a big flop. After cooking for 8 hours the potato was still not cooked through. Oh, well, at the least the dogs will have a yummy dinner tomorrow night. Instead I whipped up a quick substitute of brown rice, falafels, pineapple and hummus. Kevin then proceeds to tell me he’s getting a bit sick of falafel??? Surely that can’t be possible :-).

The night was spent putting the final touches on this blog before making it’s introduction to the WWW. Around 9pm I enjoyed a small bowl of vanilla ice-cream with a  small amount of chocolate flake on top. Yum! This is about a 1/4 of the bowl I used to have and I enjoyed every bite and did not feel one bit deprived.

Finally I enjoyed a cup of tea. I was tempted to have a chocolate but realized I didn’t need one and I’d already enjoyed my ice-cream so left it at that.

*** Oh, and the oat slice didn’t quite work out. It’s rather soft but should still be edible.
