Lazy Monday

Last nights as I was reading Happy Foody and saw a new pancake recipe. Sounded like the perfect thing for tomorrows breakfast so I went and got it started.

Had a bit of a restless night and woke up with sore back. Put off doing some exercise thinking we might do something later in the day – being that it’s  public holiday for ANZAC Day and we’re all home. Had a cup of tea while reading blogs.

Around 8am I finished off the pancakes and made up a normal batch for the others or in case mine for were a flop (like the last batch of “healthy” pancakes I tried). These, however, were just beautiful. I had mine topped with some banana and maple syrup. Kevin tried one after the “normal” one and said it was pretty good too. Will definitely make these again – though I did have to add some milk to get the right consistency. They looked so good I dove in before taking a photo :-).

Pottered around this morning while the kids and Kevin were playing games on the computer. I also helped Amy pack for the school camp she goes on tomorrow. Around 11am I had some cruskits and cheese (with a cup of tea :-)) and after an ANZAC cookie.

I then worked on my crochet for a bit – I’m trying to make fingerless gloves!! No-one could decide what they wanted for lunch today so we all ended up with something different. Kevin had a chip (crisp) sandwich!!!, Christy a cheese roll, Amy a cheese sandwich and I had a salad (surprise, surprise) with a leftover lentil burger from last night. Also added some leftover onions – yummo!

Spent the afternoon working my gloves – have finally got it worked out, and plans for our UK trip – now finalizing our plans for Scotland. Snack was some cheese, dip and crackers – shared with Kevin.

Dinner tonight was a new recipe – Mexican Rice. Turned out pretty good but I’m not sure I’d make it again as it’s quite similar to other meals we have.

Back to normal with work and school tomorrow – and housework/groceries for me!

Sleepy Sunday

Well, maybe not sleepy but I did spend the WHOLE DAY in my PJs :-).

Woke up around 7am (so a bit of a sleep in for me) and straight to the kitchen for a cup of tea and slice of banana coconut loaf. I also sampled the oat slice from yesterday – it was quite nice but a little sweet.

I had trouble deciding what I wanted for breakfast this morning but eventually decided on an omelette around 9am. I made it using 2 eggs, diced tomato, diced red onion, a handful of spinach and a handful of grated cheese. Twas rather yummy – but too much – I ate about 2/3.

I spent the morning playing on the computer, making ANZAC biscuits (for ANZAC Day) and sorting some photos. At 11am I made a green smoothie. Love those frothy bubbles.

Around 1am I made a salad for Kevin and myself. He had egg, I had falafel and hummus. Today I added some of my home grown sprouts. I wonder if I’ll ever get sick of this combination?

This afternoon I got to work on finalizing more plans for our UK trip in June. Normally sitting working online I’d be eating lots and lots but I really surprised myself today. I didn’t even enjoy my first ANZAC biscuit until 2.30pm.

My afternoon snack was some protein chips.

Around 5pm I was feeling like a little something with a cup of tea. Kevin had one of these tarts he’d bought.

But I was feeling like a crunch so had a couple of cruskits with spreadable cheese :-).

Dinner was courtesy of Kevin, who braved the cool night and cooked us a BBQ. I had a lentil pattie (with a piece taken out for Christy), sweet potato slices, a little potato, pineapple and onion. It was absolutely delicious.

With tonights cup of tea I’ll either have another ANZAC biscuit or one of the chocolates hiding in the back of the fridge.

Sugar withdrawals?

I woke up with a headache this morning – I’m thinking it might be due to sugar withdrawals. Even though I’ve been having a little each day it’s no where near as much as I was.  I decided to skip this mornings workouts and have today as my rest day instead of Sunday. Hoping to stop the headache from getting worse I had a cup of tea and piece of banana coconut loaf.

Probably not the greatest start to the day but I made up for it by having a green smoothie (and my multi-vitamin) for breakfast a few hours later.

I was supposed to do reading at school but Christy’s teacher was away so I ended up killing time at the shops before my manicure & pedicure. I was still feeling a little off so had a banana before my appointment at 10am. I don’t normally reach for fruit like this but I really enjoyed it and it actually kept me full for around 2 hours.

I was just starting to get peckish after my appointment ended at 12pm but instead of getting lunch out as I planned I decided to wait until I got home. To tide myself over I had a choc nut bar while waiting to get into the carpark in town.

By the time I got home at 1.30pm I was very ready for my salad – falafel & hummus again today – YUM!!!

Still feeling off most of the afternoon so had a tea and handful of healthy handfuls at 3pm.

Todays afternoon tea was 2 vegetarian rice paper rolls that I had picked up in town. I LOVE these but don’t get to have them very often.

At 5.30pm I had another cup of tea and an hour or so later made some quesidillas for dinner. I forgot to buy salsa for the recipe I had planned to make so had to improvise with refried black beans, tomato and cheese. Boy was it yummy.

Later I enjoyed 2 chocolates and cup of tea. Unbelievably I was more than satisfied with my two chocs – usually I would have had MANY more than that!

Around 9pm I was still feeling a little off so had a handful of the veggie tortilla chips and some hummus.

Unfortunately nothing seemed to kick the headache today but I feeling not so off when I went to bed.

Let the food blog begin

I have decided to take the plunge in the wonderful world of health food blogging. I get so much out of the blogs that I read that I thought creating my own might help keep me a bit more accountable about what I eat, and maybe even, provide some ideas for my readers – esp, those in Australia, as I am yet to find many Aussie health food blogs (if anyone knows of any PLEASE let me know).

And so…on to our first day. Now is there are a better way than to start the day than with a green smoothie blended in my BRAND NEW Vitamix.

The morning was spent doing jobs around the house and decluttering stuff in my scrapbook room. Mid-morning I had a cup of tea and a handful of …..healthy handfuls. Yes, I know these are made for kids – but I just LOVE them.

It was such a beautiful Autumn day and both girls were out playing with friends so I decided to take my lunch outside.

Most warmer days I have a salad  made up of greens, cucumber, tomato, pineapple- todays was topped with marinated tofu & a squirt of mayonnaise. Delicious. Both the weather and the food.

Around an hour after lunch I like to have a cup of tea and usually something sweet. I debated having two biscuits…

But was really feeling like more crunching so swapped for some cruskits with spreadable cheese…

But I have confess… I did go back for those biscuits later. I also drank many more cups of tea throughout day – rather neglecting my water today :-(.

Around 4pm I was peckish again so had some crackers topped with Camembert cheese – yummo!

Tonights dinner was made up of leftovers – with the addition of some vegetables – as it was just 3 of tonight (Amy was at a sleepover).

Dessert was custard – something I haven’t had in months – as I know it’s not the healthiest. I really felt like some raisin toast but we didn’t have any – guess what I’ll be buying tomorrow :-).
